Vanille-Spinat-Salat mit Honig-Senf-Dressing

Vanilla Spinach Salad with Honey Mustard Dressing


  • 1 large bowl of fresh spinach leaves
  • 120 ml honey
  • 60 ml Dijon mustard
  • 60 ml apple cider vinegar
  • 120 ml olive oil
  • 1 vanilla bean
  • A handful of toasted pecans or walnuts
  • Salt and pepper to taste


  1. In a small bowl, combine the honey, Dijon mustard, apple cider vinegar, and vanilla bean pulp (which can be obtained by cutting the pod in half lengthwise and scraping out the pulp with a knife).

  2. Slowly add the olive oil, stirring constantly, until the dressing is emulsified.

  3. Season with salt and pepper.

  4. In a large bowl, mix the spinach leaves with the dressing.

  5. Sprinkle the salad with the toasted pecans or walnuts and serve.

Serving Tip: This salad goes great with grilled chicken or salmon.
