Vanille-Hähnchen: Hähnchenbrustfilets in Vanille-Marinade gebacken, serviert mit Gemüse oder Reis

Ingredients:

  • 4 chicken breast fillets (approx. 200 g each)
  • 2 vanilla beans or 2 tsp vanilla extract
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 1 garlic clove, finely chopped
  • 1 tsp fresh ginger, finely grated
  • Salt and pepper to taste
  • Vegetables or rice, to serve

Directions:

  1. Preheat the oven to 200°C (180°C fan oven).

  2. Halve the vanilla pods lengthwise and scrape out the pulp with the back of a knife. If using vanilla extract, skip this step.

  3. In a bowl, mix together the vanilla seeds (or vanilla extract), olive oil, lemon juice, honey, minced garlic, and grated ginger. Season with salt and pepper.

  4. Place the chicken breasts in the marinade, making sure they are completely covered. Allow the chicken breast fillets to marinate in the refrigerator for at least 30 minutes and up to 2 hours.

  5. Place the marinated chicken breast fillets in a casserole dish or on a baking sheet lined with parchment paper. Pour the remaining marinade over the chicken breast fillets.

  6. Bake the chicken in the preheated oven for about 25-30 minutes, or until fully cooked through. Cooking time may vary depending on the thickness of the chicken breast fillets.

  7. Remove the baked vanilla chicken from the oven and let it rest briefly. In the meantime, cook the vegetables or prepare the rice.

  8. Slice the chicken breast fillets and arrange on plates. Serve with the vegetables or rice and enjoy.
