Ingredients

For the biscuit base:

  • 200g butter biscuits
  • 125g melted butter

For the filling:

  • 900g cream cheese
  • 200 grams of sugar
  • 4 eggs
  • 1 vanilla bean

For the vanilla sauce:

  • 250ml milk
  • 1 vanilla bean
  • 2 egg yolks
  • 2 tbsp sugar
  • 1 tbsp cornstarch

Part 1: The biscuit base - A solid base for the cheesecake

For the biscuit base, we crumble the butter biscuits in a food processor. If you don't have a food processor, no problem: Place the biscuits in a freezer bag and roll them over them with a rolling pin until they are finely crumbled. The melted butter is then added to the biscuit crumbs and mixed well.

Part 2: Prepare the ground

After the biscuit crumbs and the butter have been mixed well, the mixture is poured into a springform pan (26 cm diameter) lined with baking paper and spread evenly on the bottom. Now put the springform pan in the preheated oven at 180 degrees for about 15 minutes. Then we let the floor cool down completely.

Part 3: The filling - heart of the cheesecake

While the biscuit base is in the oven, we can start preparing the filling. To do this, we beat the cream cheese with the sugar until fluffy. Then add the eggs one at a time and mix well. Finally, we scrape the pulp out of the vanilla pod and stir it into the mixture.

Part 4: Pour the filling into the mold

After the biscuit base has cooled completely, we put the cream cheese mixture on top and spread it evenly. Then we put the mold in the oven preheated to 160 degrees and bake the cake for about 60 minutes. After the baking time, let the cake rest in the switched-off oven for another 15 minutes.

Part 5: The vanilla sauce - the icing on the cake

While the cake is in the oven, we can prepare the vanilla sauce. To do this, we heat the milk with the split vanilla pod in a saucepan. In a bowl we mix the egg yolk with the sugar and the cornstarch. As soon as the milk boils, we pour it into the yolk mass, stirring constantly. Then we put everything back into the pot and let the sauce thicken, stirring constantly.

Part 6: The Completion

After the cake has cooled, we can serve it with the vanilla sauce. We simply pour the sauce over the cake or serve it separately. Our gorgeous vanilla cheesecake is ready!
